June's Recipe of the Month:

Fresh Market Slaw

Recipe by Rachel Rubin - The Runner's World Cookbook

makes 12 servings
total time: 15 minutes
Gluten-Free  Vegetarian  Low-Calorie

Directions:
In a large bowl, combine the green and red cabbage and scallions. In a small bowl, whisk together the cider and rice wine vinegars, honey, oil, salt, mustard, and sesame seeds. Pour over the cabbage and toss. 

Serve immediately or let it sit at room temperature for up to 1 hour to allow the flavors to meld.

Nutrition Per Serving: 75 calories, 10 g carbs, 2 g fiber, 2 g protein, 3 g total fat, 0.5 g saturated fat, 284 mg sodium.

Ingredients:
1/2 green cabbage, thinly sliced
1/2 red cabbage, thinly sliced
1 bunch scallions, thinly sliced
1/2 cup apple cider vinegar
1/4 cup rice wine vinegar
2 tbls honey
2 tbls sesame oil
2 tbls salt
1. tbls mustard seeds
2 tbls toasted sesame seeds
